The 4 Knives Every Kitchen Needs

When it comes to kitchen knives, it’s more about quality and less about quantity. You can buy a niche knife for every slice and dice you make, but most kitchens need only a small handful of blades to get through any cooking project.  

Good kitchen knives can be pricey so if you approach your knife block with precision and don’t splurge on the unnecessary, you can saddle yourself with high-quality knives that last for years, even decades, without going broke.  

To find out exactly which knives a home chef should have, I spoke with Stephen Chavez, senior chef instructor for the Institute of Culinary Education in Los Angeles, to get his advice on buying kitchen knives for beginners.

Avoid big, expensive knife sets
